Hey everyone! Of all meals of the day, the most important one and the one I miss out the most is breakfast.
However, this bread poha or spiced bread recipe is one that is easy to make, delicious and meant for the ones who dont like to have sweet meals early in the morning.
This food item is called Bread Poha and I dont know how to explain this in English. The recipe is usually good to be used with leftover bread pieces (maybe the bread sides) or can be used with fresh bread (like how I do)
It is an easy breakfast meal that cooks within 15 minutes and is very filling and nutritious.
The best part about this recipe is that you can cook it haphazardly but it will still turn out to be delicious.
Ingredients
1 tomato, diced
1 bell pepper
1 onion, sliced or diced
12-15 curry leaves
3-4 green chili (depending on your spice level)
7-8 slices of bread (make small pieces of them)
2 tbsp cooking oil (you can use any oil)
1 tbsp mustard seeds
1 tsp turmeric powder
1tsp cumin powder
1 tsp coriander powder
1 tsp garam masala powder (optional)
1 tsp salt (you can add less or more depending on the taste)
2 sprigs of coriander leaves (optional)
1 lemon slice (optional, for taste)
.5 cup roasted peanuts (optional)
Steps
Chop all the vegetables and keep aside.
Tip: If you have raw peanuts, heat a pan and without adding anything, roast the peanuts for 3-4 minutes till sides of them begin to turn black. Take them out and keep aside. You can avoid this step if your peanuts are already roasted.
In a pot, add the cooking oil and wait for it to heat.
Once heated, add the mustard seeds.
Tip: The seeds will start to splatter, so to avoid that, add a pinch of salt and cover the pot with a lid.
Saute the seeds for a few seconds and add the curry leaves to the pot.
Saute again and add the onions and fry them till they are light golden brown.
Once the onions are brown and the raw smell is gone, add the green chilli and bell pepper and fry them well.
Then add the tomatoes and proceed to add the spices.
Add the turmeric, cumin, coriander and garam masala powder, while stirring in between.
Add the peanuts at this stage.
Add salt once all the vegetables and the spices are cooked for a few minutes.
Tip: Make sure the vegetables taste a little salty so that when you add the bread, the salt gets adjusted to the taste.
Once you are satisfied that the vegetables are cooked, add the bread pieces to the mix.
Stir well so that the bread pieces are well coated and cover the pot for 1-2 minutes.
Tip: If the mix feels too dry, you can add some splatter of water to the mix.
Cook for few minutes and turn off the gas.
Squeeze lemon juice and sprinkled so coriander leaves on top and cover it and keep aside for a few minutes for the flavors to be absorbed.
Serve hot or pack as breakfast for the next day.
