Easy-cook White Sauce Pasta Recipe

Hey everyone! I have a full-time job and cooking is one task I find extremely daunting, especially after work. This is my go-to pasta recipe for days I am low on energy and time, yet it's filling and delicious.

Pasta is comfort food and it is one food item you cannot go wrong with. The best part is that you can always experiment with different recipes and yet it would taste good every time.

However, over the years, this has been my all-time favourite recipe, simply because it requires the least prep and it is very filling.

It can be eaten for breakfast, lunch or dinner.


The below recipe is made for 2 people, you can half the ingredients for one person or double for more, or you can simply wing it and try and test it on your own.


Ingredients

  • 1.5 cups of pasta (I used a mix of Pipe Rigate and Farfalle)

  • 1 white onion

  • 7-8 snack bell peppers (a mix of green, yellow and orange)

  • 10-12 baby carrots

  • 6 big cloves of garlic

  • 0.5 cup flour

  • 2 cups of warm, full-cream milk (or any milk of your choice)

  • 2 tbsp olive oil

  • 1 tbsp butter

  • 4 tbsp salt

  • 1 tsp chilli flakes (as per your taste)

  • 1 tsp black pepper powder (as per your taste)

  • 1 tbsp sugar

  • 1 tbsp oregano

  • Water, to boil

  • 1 cup boiled, shredded chicken (optional)

  • 1 cup boiled, minced sausages (optional)

Steps

  • Take a large pot and add about 3 - 4 cups of water, drizzle a little olive oil and add some salt to it. Once it is hot, add the pasta to boil for 10-12 minutes.

  • In the meantime, slice all the vegetables lengthwise and chop the garlic into tiny pieces.

Tip: You can add more vegetables or remove any you don't like. If you wish to add corn or broccoli, simply semi-boil them separately for 2-3 minutes.

Tip: If you wish to add any meat to this, you can boil some chicken in salt water and shred it and keep it aside or you can boil some sausages and chop them finely and keep them aside to be added later.

  • Once the pasta is boiled, strain it and keep it aside

Tip: Don't strain the pasta completely as it tends to dry up, retain some water in it, so it remains moist or if you choose to use a different cooking pot, you can stop boiling the pasta after 8-10 minutes and leave it aside in the water.

  • In a separate pot (if you didn't strain the pasta) or in the same pot (if you strained the pasta), wipe it dry and add 1 tbsp olive oil and wait for it to heat. Once slightly hot, add the garlic and onions and toss well till the onions turn a little mushy and very light brown colour.

  • Add the vegetables and saute for 6-7 minutes, add about 1 tsp salt and saute again and then take them out in a bowl and keep aside.

  • In the same pot, add 1 tbsp butter and about 1tsp olive oil and wait for the butter to melt, add the flour and mix for about a minute, after which you can add the milk and keep stirring using a whisk.

Tip: Use a whisk to stir constantly, to remove any lumps of flour. If you feel that you are not able to break down the lumps, mix thoroughly for a few minutes till the raw smell of the milk goes away and then using the strainer, strain out some of the lumps.

  • Once the raw smell of the milk is gone, add in the boiled pasta, remaining vegetables and if you wish to add any meat and stir well so that everything is coated with the sauce.

  • Add the remaining salt, chilli flakes, oregano, sugar and pepper and mix well.

  • Let it simmer for 2 minutes, mix again and check the taste.

  • Add salt or sweetness or spice, according to your taste and mix well again.

  • Remove and garnish with some parsley.

To reheat, simply add about 0.4 cups of milk and a little salt and heat
