Easy Breakfast Pancakes

If I had to begin my day with something sweet, it would have to be this recipe of easy breakfast pancakes.

Pancakes aren't something Indian parents usually make for their children. This is a habit I picked up as an adult when I realized I can eat whatever I want, whenever I want.

These are easy to make, and delicious which gives me a happy start to my day.


I usually prefer to make them plain and pour some maple syrup with fruits on the side.


Ingredients

  • 1.5 cups all-purpose flour

  • 2.5 tsp baking powder

  • 1 tbsp granulated sugar

  • 0.4 tsp salt (as per your taste)

  • 1.4 cups milk (I usually add more if I feel the batter is too thick)

  • 0.5 tbsp cooking oil

  • 3 tbsp butter

  • 1 egg

Steps

  • Sift all the dry ingredients together in a mixing bowl

  • Add the remaining ingredients such as eggs, butter, cooking oil and milk and mix thoroughly till all ingredients are blended well.

Tip: If you want to make these into chocolate chip pancakes, you would need 1/2 cup chocolate chips, mix some flour into them till they are coated (so that they don't settle on the bottom of the pancake) then lightly fold them into the pancake batter

  • Now, low heat a cooking pan (I use a mini omelette pan for size and consistency) and rub some butter on it

  • Pour out 1 ladle-scoop of the batter onto the low-heated pan and cook on low heat

  • Once the edges of the batter begin to bubble, using a silicone ladle, gently scoop and flip to the other side.

  • Wait a few minutes to lift and check if the other side is cooked. Remove once both sides are light golden brown.

  • Serve with maple syrup or honey and compliment it with fresh fruits and yoghurt.
