One of my favorite breakfast items (only because it is so easy to make) is this easy 3 bean salad recipe.
The best part about this is that you can always mix and match and try new ingredients and every time it tastes different and perhaps better.
I have tried different combinations but the recipe below is the one I make most often and my boyfriend really likes it.
Ingredients
1 cup red kidney beans
1 cup pinto beans
1 cup Cannellini or white kidney beans
1/2 red bell pepper
1/2 green bell pepper
1/2 yellow or orange bell pepper
1/2 red onion
1/2 cucumber
1/2 tomato
1 green chili
1/2 cup finely chopped coriander
2 tbsp olive oil
1/2 lemon
1tsp chaat masala
1/2 tsp salt
1/2 tsp pepper
1/4 tsp sugar (optional; more or less to taste)
Steps
I usually prefer to use regular beans and soaking them overnight. When I am making the salad, I boil them once in a pressure cooker
Tip: If you dont have time for this, you can simply used canned beans and remove them from the can and wash under running water before adding to the bowl
Chop the onion and keep aside in a bowl of water, this helps to take away the strong taste and smell of the onion
in the meantime, chop the remaining vegetables
Take a mixing bowl, add the beans, all of the vegetables, chopped coriander and squeeze in the lemon
In a separate bowl, Add the olive oil and and the dry spices. Mix well and add it to the salad
Toss all ingredients well till all items are evenly coated with the dressing
Garnish with some more chopped coriander and squeeze lemon on the top, before serving
Tip: If you have the time, refrigerate the salad for a few hours for the flavors to be absorbed by all the items.
